Congrats! Why not take him scuba diving, it's a great way to connect with him!! If you are not certified and not sure if you want to get your certification you can do an intro course where you dive with an instructor and he can dive with you. Sounds like he likes the outdoors and adventure, why not show him your adventurous side, guys love it. Maybe make a day out of it, go diving, take him to dinner or pack a picnic lunch to eat on the beach, or ry to find someway to tie it back to your first date together. Hope this helps, good luck.
